One skillet, a handful of pantry staples and a whole lot of flavour. Tofu soaks up Phlippens Jerk like it was made for it, then gets tossed with sweet pineapple and black beans and piled over rice. And since Phlippens Jerk is vegan, this whole bowl is too.
Prep: 10m (plus 30m to marinate) | Cook: 20m | Heat: Medium (Phlippens Jerk)
Ingredients:
- 1 brick (about 350 g) of your favourite firm or extra-firm tofu
- ½ cup Phlippens Jerk (divided)
- 1 can (398 mL) pineapple chunks, drained
- 1 can (540 mL) black beans, drained and rinsed
- 1 tbsp vegetable oil
- 2 cups cooked rice
- Optional: sliced green onions, fresh cilantro and lime wedges for garnish
The Gear:
- Large cast iron pan or skillet
- Mixing bowl
- Paper towels or a clean tea towel
- Spatula
Instructions:
- The Press: Pat the tofu dry with paper towels, pressing gently to squeeze out as much water as you can. Cut it into bite-sized cubes.
- The Marinade: Toss the tofu cubes with ¼ cup Phlippens Jerk in a bowl and let them sit for at least 30 minutes.
- The Sear: Heat the oil in a large cast iron pan over medium-high heat. Add the tofu in a single layer and cook for 8 to 10 minutes, turning a few times, until golden on most sides.
- The Toss: Add the pineapple chunks, black beans and the remaining ¼ cup Phlippens Jerk. Throw it all together and cook for 5 minutes, until everything is hot and the sauce turns sticky.
- The Rice: Stir in the cooked rice, or spoon the skillet mix over a bed of it, and give it a couple of minutes to warm through.
- The Finish: Top with green onions and cilantro, squeeze over some lime and enjoy.
Phlippen Tip: Don't skip the press. The drier the tofu goes in, the more Phlippens Jerk it soaks up and the crispier the edges get.
Pro-Tips & Pairings:
- Leftover Love: This packs beautifully for lunch the next day. Wrap leftovers in a warm tortilla for a quick jerk burrito.
- Drink This: A cold lager with lime or a ginger beer to play off the pineapple.
