A jerk chicken sandwich with island swagger. Chicken breasts pounded thin and soaked overnight in Phlippens Jerk, grilled hot over charcoal, then stacked with grilled pineapple, a crunchy tropical slaw and a swipe of Phlippens Hot mayo. One bite and you'll be planning the next cookout.
Prep: 25m (plus overnight marinade) | Cook: 15m | Heat: Medium-Hot (Phlippens Jerk and Hot)
Ingredients:
- 4 boneless, skinless chicken breasts
- ½ cup Phlippens Jerk, for the marinade
- 2 tbsp Phlippens Hot, for the bun
- 2 tbsp mayonnaise, for the bun
- 4 burger buns, buttered
- 4 pineapple rings (fresh or canned)
- Shredded lettuce
- 1 tomato, sliced
- Sliced red onion
For the Tropical Slaw:
- 1 bag of coleslaw mix
- 4 tbsp mayonnaise
- 2 tbsp Dijon mustard
- ¼ cup red wine vinegar
- 3 green onions, chopped
- ½ cup red onion, diced
- 1 jalapeño, diced
- 1 cup pineapple, diced
- 1 tsp salt
- 1 tsp black pepper
The Gear:
- Charcoal grill (a gas grill works too)
- Meat mallet
- Large zip-top bag or covered dish
- Large mixing bowl
- Tongs
Instructions:
- The Flatten: Pound the chicken breasts with a meat mallet to an even thickness, about ½ inch.
- The Marinade: Coat the chicken in ½ cup Phlippens Jerk, seal it up and refrigerate overnight.
- The Slaw: In a large bowl, whisk together the mayonnaise, Dijon, red wine vinegar, salt and pepper. Add the coleslaw mix, green onions, red onion, jalapeño and diced pineapple and toss well. Chill until you're ready to build.
- The Fire: Set up your charcoal grill for direct grilling at 400°F.
- The Grill: Grill the chicken for about 6 minutes a side, until it reaches 165°F inside. While it cooks, grill the pineapple rings for 2 to 3 minutes a side and toast the buttered buns.
- The Build: Mix the Phlippens Hot with the mayonnaise and spread it on the bottom bun. Stack on shredded lettuce, tomato, red onion, jerk chicken, grilled pineapple and a pile of Tropical Slaw, then crown it with the top bun.
Phlippen Tip: Pounding the chicken flat is the move. It cooks evenly, stays juicy and gives the jerk marinade more surface to work its magic.
Pro-Tips & Pairings:
- Leftover Love: Extra Tropical Slaw is excellent on fish tacos or next to anything off the grill.
- Drink This: A cold Red Stripe or a rum punch to keep the island vibe going.
