The Rasta Rooster

(1) Flattened some chicken breasts with the a meat hammer and marinated them overnight in Phlippen Jerk.


(2)Got the Charcoal Grill set up for direct grilling at 400f. Buttered and toasted some buns, grilled up some pineapple and the chicken breasts for about 6 mins a side.

(3) Made up some Tropical Slaw:
- 1 bag of coleslaw mix
- 4 tbsp mayo
- 2 tbsp dijon mustard
- 1/4 cup red wine vinegar
- 3 green onions chopped
- 1/2 cup red onions diced
- 1 jalapeño diced
- 1 cup pineapple diced
- 1 tsp salt
- 1 tsp black pepper


(4) Assembled the sandwich starting with the bottom bun, Phlippen Hot sauce and mayonnaise, shredded lettuce, tomatoes, red onions, jerk chicken, grilled pineapple, Tropical Slaw and the top bun.
