Ingredients:

  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 1 avocado, sliced
  • ¼ cup crumbled feta or goat cheese
  • 2 tbsp toasted sesame seeds or pumpkin seeds
  • Optional: hard-boiled eggs, edamame, shredded carrots

For the Phlippen Vinaigrette:

  • 2 tbsp olive oil

  • 1 tsp Dijon mustard
  • 1 tsp honey

Instructions:
