Darren's 3-Cheese Portobello Mushrooms

The ultimate stuffed mushroom that eats like a meal. Rich, earthy, and loaded with a triple-threat of melted cheeses and smoky Phlippen flavour.

Prep: 15m | Cook: 20m | Heat: Choice (Mild to Hot)

Ingredients:

  • 4-6 Large Portobello mushroom caps (cleaned and stems removed)

  • 1/2 cup of your favourite Phlippens Sauce (Original or Hot Smoked)

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup freshly grated Parmigiano Reggiano

  • 4 oz goat cheese (cut into thick medallions or crumbled)

  • 1/2 green bell pepper, finely diced

  • 1/2 small onion, finely diced

  • 2 cloves garlic, minced

  • 4 slices of smoked bacon, cooked and crumbled

  • Extra Virgin Olive Oil (EVOO)

  • Pinch of sea salt

The Gear:

  • A outdoor grill (or indoor grill pan)

  • Small mixing bowl

  • Pastry brush for the "Sauce Boss" finish

Instructions:

  1. Heat it Up: Preheat your grill to medium heat. You want a steady heat to melt the cheese without burning the mushroom bottoms.

  2. The Prep: Clean your mushroom caps and lightly brush the outside with EVOO and a pinch of sea salt.

  3. The Filling: In a small bowl, sauté your onions, peppers, and garlic in a splash of EVOO until soft. Mix in your bacon crumbles.

  4. Layer the Flavour: Fill each cap with the onion and pepper mixture. Top with the shredded cheddar, Parmigiano Reggiano, and finally, those thick pieces of goat cheese.

  5. The Grill: Place caps on the grill. Cover and cook for about 12–15 minutes until the mushrooms are tender and the cheese is bubbly and golden.

  6. The Phlippen Finish: In the last 2 minutes, drizzle a generous amount of your favourite Phlippen Sauce directly over the melting cheese.

  7. Serve: Garnish with a little more fresh Parm and serve while screaming hot.

Phlippen Tip: If you want a bit more crunch, toss some Panko breadcrumbs with EVOO and sprinkle them on top before grilling.
